Beetroot, or more commonly “beets”, are big and bold and RED! Their color is so intense that beet juice is an effective natural food coloring! If you’ve ever sliced a beet you’re aware of the intensity of its color that stains fingers, nails, and hand-wiped aprons!

What a great way to wrap up this year’s January cleanse as we are about to move into the month of love. The color alone makes me think of Cupid, and the almost heart-shaped root reminds me of February hearts. Beets are great in salads, whether raw or cooked, and served cold.
