New Year Cleanse: Day 12 — Awe-inspiring Artichokes | The North County Moms

This is definitely a vegetable I seek out to add to my menu whether cleansing or just eating consciously with healthy goals in mind. I love them steamed. It’s actually a fun eating activity to scrape the individual bracts (or petals) with my teeth to enjoy the plump artichoke at the base of each section.

Maria’s Cleanse Notes 

For me the best part about eating steamed artichokes is dipping each petal (or bract) into a warmed olive oil and lemon blend. These days, on the cleanse, I even like to sprinkle a little nooch on top of the freshly dipped course leaves to enhance the flavor and to take in a little more nutritious goodness. Since my sons have been eating artichokes since they could put a spoon in their mouths, I know that kids love this exotic vegetable, too! They think it’s fun to be able to use their fingers and not a fork to get at the good stuff inside these gems.

Artichokes are a Roman food par excellence! I must have been 5 or 6 years old when my grandma started teaching me how to prepare artichokes properly. Artichokes are not only
delicious but also have numerous health benefits. They are rich in prebiotic fiber that feeds the healthy gut bacteria, supporting digestion and elimination. They are a good source of vitamins C and K, contributing to immune function and bone health. Artichokes contain antioxidants, including quercetin and rutin, which have anti-inflammatory properties and may contribute to overall well-being.

Additionally, these vegetables provide essential minerals such as magnesium, potassium, and iron. Artichokes are low in calories and fat, making them a weight-friendly addition to meals.
