As we enjoy the last week of summer, treat the kiddos to some colorful and tasty goodies to give a nod to a season of the best in healthy raw fruits and veggies. Cut them in chunks and slide on skewers to make eating fun. It’s a recipe from Doctoral Candidate, Francesca Orlando, M.S. NTP, CGP –

Ingredients:
- Cherry tomatoes
- Red bell pepper, cut into chunks
- Orange bell pepper, cut into chunks
- Yellow bell pepper, cut into chunks
- Green bell pepper, cut into chunks
- Cucumber, sliced
- Purple grapes
- Wooden skewers
Instructions:
- Assemble Skewers: Thread the vegetables and grapes onto the skewers, creating a rainbow pattern.
- Serve: Arrange on a platter and serve with hummus or a yogurt-based dip.
